Vegan For A Week. DAY 3

Who knew I could go this long without a bite of meat!? Not me!! So far so good. I still have my sanity, which makes everyone that has to see me on the daily pretty happy. I have a lot more energy throughout the day. I'm not as hungry anymore. My clothes are even fitting better. And I just feel a whole lot healthier! LOVE IT.

Did you know that by switching to a vegan or vegetarian diet, you can shrink your carbon footprint by up to 1.5 tons of carbon dioxide a year? That's about the weight of an industrial steamroller. Dang! Not sure if a week of being vegan will make that big of a difference. But at least I'm doing SOMETHING to help our planet. And so should you!


Yesterday I mentioned I'd make vegan stuffed peppers. Not only did I make them for dinner this evening, the process has been documented in a photo montage for your viewing pleasure. I know, right? Whole Foods has an assortment of vegan goodies that I've been dying to try. I found some protein crumbles that look OH SO GOOD. Not. In any case these stuffed peppers were really easy to make and turned out pretty effin' fantastic. High in fiber and protein?! You can't go wrong. If you're in the area... come on over... I've got left overs!
