Vegan For A Week. DAY 2

Vegans don't use any products made from animals. To stay true to my vegan for a week experiment, I did not wear my leather belt today. I know... I know... crazy, right? I guess now's a better time than any to bust out my pleather (aka "animal friendly") jackets. Stylin'. And Thank you Nathan for the trade-backs. Your 1970s' vintage leather jacket will be missed. (single tear)

Today's food consumption consisted of apples, carrots, peppers, and peanut butter. Oh god, that peanut butter. Extra crunchy. My fave. But did I have to eat the entire container? No regrets. Tomorrow I plan on making vegan stuffed peppers. I promise to document the entire process. Just wait.

Ya know, for Day 2, being vegan isn't half bad. I'm eating a lot healthier (minus the PB), and it makes me more aware of what I'm eating. And also why I chose to do this in the first place. My friend Nicki says, "If 2/3rds of Americans gave up meat we could stop world hunger." Nicki's a hippie. And that's why I love her. If we could all bring out our inner-hippiness and live to love and love to live, this world would be such a happier place.

Thank you to everyone who has suggested vegan recipes and books! It's good to see all you vegans come out of the woodwork. Before the week's over I plan on making kale chips and trying The Chicago Diner.

Not gonna lie, a steak burrito from El Gallo Bravo sounds SO good right now.
